Easter Cupcakes – 3 Ways

With every new season, holiday or occasion comes one more excuse to bake something delicious. Easter is this upcoming Sunday therefore I finally found the time to bake up not one, not two but three different Easter cupcakes to suit everyone’s taste. (Lovely play on words there) All 3 cupcakes follow the same recipe but each have different toppings, all with an Easter theme.


MAKES 15 Medium Cupcakes

Cupcake Ingredients

6oz/170g Softened Butter

6oz/170g Plain Flour

6oz/170g Sugar

3 Eggs

Icing Ingredients

5oz/140g Softened Butter

7.5oz/215g Icing Sugar

Food Colouring In Chosen Colours

1tsp Vanilla Extract (Optional)

Any other additional toppings for decoration


Method

  1. Preheat oven to 170c and line cupcake tins with paper cases.
  2. Beat together butter and sugar with using an electric mixer or by hand until the mixture is lighter and fluffier.
  3. Crack in 1 egg and 1/3 of flour and mix until all is combined. Add in baking powder and repeat 2 more times. Once all of the cupcake ingredients are mixed in to a smooth consistency, transfer the mixture evenly to your cupcake cases.
  4. After 15-17 minutes in the oven, check that the cupcakes are cooked all the way through by inserting a knife or cake tester that should come out clean.
  5. Transfer to a wire rack until cool.
  6. For the icing, mix together the butter, vanilla extract and icing sugar by hand or more easily with an electric mixer until light and fluffy icing had formed.
  7. Next add in the food colouring in small amounts at a time until you achieve the colour you’d like.
  8. Evenly pipe or spread on your icing to the cooled cakes and add any chosen toppings.

For the bunny ear cakes, melt milk chocolate and transfer it to a piping bag. Snip a small hole at one corner of the bag and pipe sets of bunny ears on to greaseproof paper. To make it easier, draw out the ear shapes on to paper beforehand and place under the greaseproof paper as a guideline. Also make extra sets of ears as they are very fragile. Place them in a fridge until they have hardened and set.

For this cupcake I decorated it with Cadbury Mini Eggs, Asda’s even more mini Mini Eggs and broken up flake to create a chocolate nest.

Here I used the melted chocolate, bunny ear technique. To add some more colour I added coloured chocolates to some of the sets.

On the last of 3 Easter cupcakes I mixed up some green icing to create the look of grass for the Maltese chocolate bunnies to sit on.

    This has made me so hungry because they look so so good!! I’d definitely love to try and make these but I bet you my decoration would be absolutely rubbish!!
